In Vietnam, they brew coffee using a special coffee filter ( phin ). They put these on top of the coffee cup. The Trung Nguyen coffee filter is made of stainless steel and consists of 4 parts:
- A dish with holes in the bottom
- An elongated steel cup
- A filter
- A lid
The Trung Nguyen phin filter consists of a round perforated plate, which fits over a coffee mug or cup; a brewing chamber, which sits on top of the plate; a perforated insert that fits into the chamber to tamp the soil; and a cap to keep the heat in.
How to use the phin filter:
Put 2-3 tablespoons of ground coffee into the filter and gently push in the filter press.
Place the filter on the cup and add a small amount of hot water (96-100°C) to moisten the coffee.
Wait about 20 seconds.
Fill the filter chamber with hot water and cover with the lid.
During the next 5 minutes the water should drip through the strainer.
Remove the lid from the cup.
Add condensed milk or sugar according to personal preference. Vietnamese coffee can be served hot or add ice if you want to serve it as iced coffee.
