Another week, another adventure! Hey hey, how’s your week? Hope you’re having a blast trying new things this week. We’ve been talking all about desserts lately, haven’t we? So today, let’s switch it up and talk about something savory, Char Siu!
Char Siu is one of the most iconic dishes in Cantonese cuisine, and it’s been around for a long time! Its history dates back to the Tang Dynasty (618–907 AD), but it really took off during the Song Dynasty (960–1279 AD). Originally, it was a clever way to preserve pork before refrigeration, roasting it to keep the meat flavorful longer. Over time, it turned into a beloved dish that’s now a staple of Cantonese food.
The name "Char Siu" means "fork roast," which comes from the old method of roasting pork on long forks over an open flame. This gives the pork its signature smoky, charred flavor and that shiny, caramelized glaze. Made with cuts like pork shoulder or belly, it’s marinated in a mix of soy sauce, hoisin, honey, five-spice, and sometimes a dash of red food coloring.
Even today, Char Siu is super popular! You can find it just about everywhere, from street food stalls to restaurants. It’s a dish that’s stood the test of time and is still a favorite for many.
